With over 16 years experience as Executive Chef at Dubai’s famous Lebanese restaurant Al Safadi I learned long ago that one has to be well organised, flexible and above all extremely good at time management in order to succeed in the kitchen!

Of course I love keeping my team motivated and productive. The ability to communicate on all levels is essential to the day to day running of a restaurant that caters for breakfast, lunch and dinner as well as outside catering, special events, corporate buffets and wedding parties.

I train my team by example and show them my knowledge from past experiences within hospitality with nothing left out! I show them how to take control of their station and at the same time work as part of a team, ensuring that every day they raise the bar and make significant contributions to the overall restaurant effort on all levels.  They learn new cooking techniques, recipes, preparation procedures and so much more that increases their skill set weekly, monthly and yearly!

Having originally trained at Bir Hassan Culinary Institute in the Lebanon, I have various certifications including Advanced Food Hygiene. With extensive experience in new kitchen openings I have a passion for each and every project to ensure operations are none other than a roaring success!

Something New Is Cooking!

Yes that’s my mantra! As a small child I used to watch my mother, grandmother and aunts cook and one of my very favourites was the roasted chicken.  I recollect how I used to open the oven door to tear off the crispy, golden skin and savour the taste of the great tasting food that would lead to my dedicated, lifelong career.  I have a passion for creating new dishes for Al Safadi’s already extensive, authentic Lebanese restaurant. All too often I find myself called upon to provide new menu consultancy for innovative dishes that will challenge the tastebuds and keep clients coming back for more and more.

Of course daily administrative duties, managing my team, schedules, ordering and checking fresh daily supplies and reporting to the owners of Al Safadi is all in a day’s work and I wouldn’t have it any other way!
